A popular taste of Hawaii has come to the Red Rock Country.

Sedona resident Ryan Nichols opened Sedona Poke Company earlier this month.

“I spent most of my childhood in Hawaii so I was eating Poke all the time,” explained Nichols.

Recently, the Sedona Red Rock High School graduate said he noticed all these Poke restaurants opening up in Scottsdale and Phoenix.

So he and his cousin Gregory Nichols started visiting Poke restaurants to come up with the best concept they could for a Poke restaurant in Sedona.

Poke “is a traditional Hawaiian dish,” explained Nichols. Its raw ahi (tuna) mixed with sesame seeds, soy sauce, several types of seaweed, sesame oil and a little bit of honey.”

There are different types of Poke and Nichols is offering them in his new restaurant.

His restaurant is one-of-a-kind, Nichols said. He came up with the business plan himself using the best of all the restaurants he has researched.

It’s kind of a sushi bar meets a Chipotle.

There is raw fish, there is the kiosk-line and the bins of endless choices to go into your Poke bowl.

Customers first walk into the restaurant and are met with a computer kiosk with their order choices.

“Tap to get started.”

Different bowls appear for a customer to create and then order. Once customers choose their base of rice, mixed greens or seaweed wrap, the kiosk pages leads them through choices of Poke proteins (marinated ahi, raw ahi, raw salmon, tofu, chicken breast) and then toppings, sauces and then dry toppings.

All these are added to a cart with a drink choice and bowls are constructed by a restaurant employee behind the counter in a Chipotle-restaurant style of service.

“This is one-of-a kind,” Nichols said.  Many Poke restaurants have this general set-up, but Nichols said he designed this layout just for his first restaurant in Sedona. “I did it from scratch.”

“Let’s bring something different, something good, something quick,” he said. There’s not a lot of options in Sedona for quick, quality take-out.

The food is all fresh, the fish is wild ahi through Santa Monica Sea Food. There’s a huge list of items that can be added to the bowls listed on Sedonapokeco.com that people can look up.

Before Poke, Nichols was running a computer repair business, the PC Fixers, which he had someone else take over.

Nichols said he is now concentrating on Poke and his four employees.

The restaurant is open 11 a.m. to 11 p.m. on weekdays and 11 a.m. to 9 p.m. or 10 p.m. on Friday and Saturday. They are still coming up with exact hours for weekend closing, he said.

“We do want to cater to a later crowd. There’s nothing open around here. At 9 o’clock all the restaurants are closed,” he added.

“Sedona doesn’t have anything like this,” explained Nichols. Dining is casual and the restaurant is a convenient store-front in the Harkins Theater parking lot.

Since mid-July, Rotten Johnny’s Wood-Fired Pizza Pie establishment in The Collective has offered Villagers and visitors alike high-quality thin-crust pizza.

Rotten Johnny’s is a nice complement to the fine dining J Wine Bistro, not only because of the different menus and styles of service but also the hours and days of operation. Choices are what we like.

The hours for Rotten Johnny’s are: 7 days a week 11am to 9pm (J Wine Bistro is open Tuesday-Sunday 4-9 p.m.)

We suggest to first order the Antipasto Salad –good and almost a meal in itself.

Rotten Johnny’s has other interesting ingredients available as an extra for cost or part of the general menu offerings: Genoa salami, hot soppressata, capocollo, pancetta, fennel sausage, caponata, Calbrian chiles, ricotta, arugula, wood-roasted mushrooms, black truffle and Mediterranean olives.

There are seven 13-inch Red Pizzas and seven 13-inch White pizzas to choose from. Half & half is possible for no extra charge.

There is cheese-less pizza, more than one vegetarian pizza and several loaded pizzas.

The Pancetta Pizza includes caramelized onions. It was served timely and more than satisfied our appetites.

Deciding on beer for our beverage, some choices are Deschutes Black Porter, Mother’s Road Tower Station IPA, and local Huff Brewing Company Orange Blossom. Many other beverages, soft and alcoholic, are available.

John is known for keeping an excellent wine menu and that is available by the glass or bottle.

Good use is made of the wood-fire as shrimp, olives and vegetable of the day are offered, along with burrata and chili peppers stuffed with tuna.

Desserts, locally made, are also available. Pizzas take only a few minutes to bake in the hot oven, so wait time isn’t an issue. Call in orders take 15-20 minutes.

The Hudson calls itself a neighborhood restaurant and that is true.  You almost always need a reservation for dinner.  Start with the beer-battered Calamari topped with julienned vegetables and served with a spicy chili-paste orange marmalade.  The Hudson Mushroom Burger is a house favorite.  The burger is adorned with Portobello mushrooms, spicy jalapeno bacon, haystack oion strings, arugula and truffled Gouda.  Don’t forget the 8 different style brushetta as an appetizer.  Happy hour daily from 3-6pm.

TASTING ROOM & BISTRO
Our Tasting Room is open 7 days a week, 365 days a year. We welcome you to join us Sunday–Wednesday, from 11 a.m. to 7 p.m., and Thursday to Saturday, from 11 a.m. to 9 p.m. In our Tasting Room, not only can you sample our wines and enjoy our delicious bistro offerings, but you can also peruse a gallery of local artists and check out our weekly line-up of live music.

We get a little busy on the weekends, so if you find yourself having to wait for a spell, relax on our shaded front veranda or stroll our beautiful grounds. Also, parking can be tight when we’re busy, but our friendly parking attendants will help guide you (and your car) to a spot.

Here’s what you do:
Simply choose a flight (we offer a variety of flight styles), sit back, and let our expert tasting room staff pour and educate. Each flight costs $11 and includes five tastes, plus a souvenir tasting glass.

Want something extra special? For $25, you can order the Reserve Flight, which includes five specially selected, limited-edition wines. There’s also our Library Wine menu, an offering of some of our best wines that have been intentionally cellared for release at the optimum time.

Of course, you’re not limited to tasting flights. Almost all of our wines are available by the glass or bottle.

Winery Tour
Our flagship tour, this is a 60–90 minute guided exploration of Page Springs Cellars, where you’ll get an insider’s look into winemaking. You’ll learn the history, culture, and process of winemaking, from grape to bottle, plus you’ll get 5 tastes of our award-winning wines, including a special tasting pulled directly from barrel. Explore areas of our grounds not open to visitors, including our estate vineyards, cellar, barrel room, and crush pad. Bonus: You’ll receive a souvenir glass to take home.
